Eggplants, onions, peppers and semi-dried tomatoes come together in a unique version of the classic Sicilian caponata, enriched by the scent of mint. Hand-cut and preserved in high oleic sunflower oil and extra virgin olive oil, the vegetables release fresh and intense flavors.
