Santoña is a beautiful seaside town in Cantabria. It is located inside a small rocky promontory, and is therefore protected from the open sea. Its location has made it a very privileged natural port, and perhaps this is also why the city of Santoña is the first port in the Cantabrian Sea for the fish canning industry.
At Conservas Emilia, every single step is carried out exclusively by hand, there is no type of industrial or minimally mechanized process and this guarantees an incredible control over the raw materials.
The final phase in particular, when the anchovies are canned, is the most delicate. The fillets are further passed by hand one by one (which had already happened with desalination) and this is what ensures that the fillets remain so sweet and absolutely not salty.
In this city, such a high level of know-how has been developed in the conservation of these fish that over the years people from various parts of the world have come here to learn and study the techniques, including many Sicilians who have then imported the conservation method into their own companies.
