Domaine Jean Dauvissat extends across 22 hectares of vineyards spread across 53 parcels and 7 communes in the Chablis appellation, a mosaic that best expresses the diverse nuances of the terroir of the Serein River valley.
The winery's philosophy is clear: let the terroir express itself. Interventions in the vineyard are minimal and targeted, with low yields, selective pruning, and minimal organic fertilization. Since 2011, herbicides and insecticides have not been used, and in 2018, the Domaine introduced biodynamic practices to preserve the vitality of the soil and the health of the vines.
Daily work involves tending the soil with mulching of the shoots, sowing for winter cover crops, and natural composting using cow manure. All this allows for authentic, mineral, and elegant wines, faithful to the Chablis tradition and respectful of the vineyard's natural balance.
