Domaine Gautheron, located in the small village of Fleys, just outside Chablis, is a family-run wine estate for seven generations. Covering 25 to 30 hectares of vineyards, it produces a wide range of appellations: Bourgogne Blanc, Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru.
Since 2009, part of the vineyards have been organically farmed; since 2020, the entire estate has obtained HVE Level 3 certification, the highest French recognition for environmental respect. The Kimméridgian soil, rich in marine fossils, is the mineral soul of Gautheron's Chablis wines.
Precision farming practices – controlled yields, minimal mechanical work, manual harvesting for the most prized crus – and gentle cellar work (gentle pressing, separate fermentations, long aging on the lees) combine with a modern yet authentic approach to winemaking.
