From the Modena cuisine, a recipe donated by Mrs. Augusta: vegetables chopped with a knife, with a well-balanced acid note. Green pepper and celery are the protagonists, enhanced by high oleic sunflower oil and extra virgin olive oil.
Fresh and with a strong taste, it is perfect with boiled meats, cotechino, cured meats, hard-boiled eggs and vegetables. Excellent on focaccia and bruschetta, it is also surprising as a condiment for English roast beef.
