Clandestin Champagne Boréal Brut Nature 2019 Disgorgement 2022
Champagne Boréal Brut Nature Clandestin is a label with a strong personality, born in the Côte des Bar from the meeting between Benoît Doussot and Bertrand Gautherot, founder of Vouette et Sorbée. This cuvée reflects the philosophy of the Clandestin house: to enhance the west-facing vineyards, where the slow ripening of the grapes gives the wine unique tension and extraordinary aromatic complexity.
The 2022 disgorgement bestows Boréal with vibrant freshness and rare precision. The winemaking process is conducted with full respect for nature: spontaneous fermentation with indigenous yeasts, aging in 350- and 600-liter oak barrels, and no fining or dosage. This approach allows the purity of the terroir and the identity of the Côte des Bar vineyards to be fully expressed.
On the nose, fruity and citrus notes emerge, combined with mineral hints and nuances of fine spices. On the palate, Boréal stands out for its crystalline energy, incisive freshness, and persistent finish, making it an ideal Champagne for those seeking an elegant and authentic Brut Nature.
Perfect as a gourmet aperitif champagne, it pairs magnificently with raw seafood, oysters, sushi, and fish carpaccio, but is also suitable for vegetarian dishes and fresh cheeses.
