Champagne Clandestin is the result of a visionary project by Benoît Doussot, a young talent from Burgundy, and Bertrand Gautherot, founder of the renowned Vouette et Sorbée house. It originates in the Côte des Bar, the southernmost part of Champagne, where the two producers have chosen to enhance the west-facing vineyards, traditionally less appreciated but capable of producing grapes of extraordinary finesse.

These cooler and less immediate parcels allow for a slow and even maturation that gives Clandestin champagnes tension, depth, and aromatic complexity. It is precisely this unconventional choice that makes them unique among artisanal terroir champagnes.

The production philosophy is clear: low yields, vines over 20 years old, and organic certification, in a virtuous pact involving local winemakers with fair and sustainable agreements. The winemaking process reflects the same respect for authenticity: spontaneous fermentation with indigenous yeasts, aging in 350- and 600-liter oak barrels, no fining, and no dosage.

The result is a natural and elegant champagne, with vibrant energy and mineral precision, combining freshness, complexity, and great drinkability.
