Dettori Chimbanta Romangia PGI 2021
Dettori's Chimbanta is an intense, deep and authentic red wine, produced from pure Monica grapes grown as bush vines on the hills of Badde Nigolosu, in Sennori, in the province of Sassari. Born as a tribute to the fifty years of Paolo Dettori, father of the winemaker Alessandro, Chimbanta is much more than a wine: it is a fragment of Sardinia in a bottle. No use of chemicals or sulphites, spontaneous fermentations, aging in cement for over two years and no filtration: each bottle tells a radical idea of purity and territory.
In the glass it presents an intense ruby red. On the nose it conquers with an expressive and Mediterranean bouquet: myrtle, scrub, fruit jam, juniper, and a final salty note that recalls the sea. The sip is rich, enveloping, but never heavy: balance between matter and freshness, dense but silky tannins, long gustatory and aromatic persistence.
