The Santa Catarina canning industry is located by the sea, in Fajã Grande of the village of Calheta, on the island of São Jorge, in the Azores archipelago.

It is a company that is exclusively dedicated to the production of canned tuna, and that combines technology and ancestral artisanal methods in order to obtain quality production. The factory is currently the largest private employer on the island of São Jorge, with 139 employees, 19 of whom are male and 120 female. For a so-called small island or a peripheral island, the number of jobs it has created is significant, so it is a true project of social responsibility.

Santa Catarina preserves are made with tuna caught in the Azores using the Jump and Pole method (artisanal fishing with a rod, 1 man, 1 fishing rod, 1 hook, 1 tuna), a method that selects the best specimens, safeguarding the conservation of the species and respecting the marine ecosystem. This young industry has bet on quality, producing mainly fresh local tuna, which is then transported to the factory where it is cooked, cut/trimmed and canned, by hand, where seasonings are added, sealed in the can and ready for marketing.
