Pavelot Corton - Charlemagne Grand Cru 2021

The 2021 Pavelot Corton-Charlemagne Grand Cru represents the pinnacle of the Domaine's production, a great white Burgundy that perfectly combines power and finesse. Made from 66-year-old vines located between the En Charlemagne and Le Charlemagne parcels, facing south and west, this Chardonnay is rooted in marly, calcareous soils that impart unique minerality and longevity. Vinification involves manual harvesting, spontaneous fermentation, and twelve months of aging in French oak barrels (approximately one-third new), followed by a period in stainless steel to preserve freshness and tension. In the glass, it presents itself luminously, with complex aromas of ripe citrus, white-fleshed fruit, flowers, and delicate notes of butter, honey, and sweet spices. The palate is broad, deep, and enveloping, yet supported by a vibrant acidity that gives it balance and extraordinary aging potential.
