Pavelot Pernand - Vergelesses En Caradeux Premier Cru BIO 2020

The Pavelot Pernand-Vergelesses Premier Cru “En Caradeux” 2020 is an elegant and finely textured Pinot Noir that has its roots in a unique terroir: a steep, caillouteuse, limestone-clay parcel, located on the slopes of the Corton hill, in a cooler area than the other southern Premier Crus of the village. The harvest, strictly manual, is characterized by the use of partially whole bunches (30-50%) and a delicate maceration, followed by fermentation on indigenous yeasts in concrete tanks for approximately 16 days and a twelve-month aging in French barriques (40% new) on the lees, with racking and blending before bottling.In the glass, the wine captivates with an intense explosion of black fruit, long and enveloping tannins, and a depth that is confirmed year after year.
