Pavelot Pernand - Vergelesses Les Fichots Premier Cru 2020

The 2020 Pavelot Pernand-Vergelesses Premier Cru “Les Fichots” is a refined Pinot Noir made from three east-facing parcels with dual-character soils: on one side, pure clay and coarse sand that lighten the structure, and on the other, brown clay-limestone and limestone-rich soils located below the “Îles des Vergelesses” . This cuvée, considered the “entry point” in the Domaine’s Premier Cru range, stands out for its ability to open up easily even in its first years, while maintaining beautiful depth and solid aging potential . Vinification involves manual harvesting, slow fermentation with 20–40% whole bunches, gentle pressing and fermentation in concrete vats with indigenous yeasts. The refinement lasts 12 months in French barriques (30% new) on the lees, with targeted racking and blending before bottling.
