The Zambon Fidelis Bianco It is a wine of rare complexity, produced from pure Garganega hand - picked in the Fidelis vineyard , located on the volcanic hills of Monte Mezzo , an ancient extinct volcano in Gambellara ( VI) , at an average altitude of 270 metres above sea level .
The vines, trained using the Veronese pergola system With a low yield of just 40 hl per hectare , they express the full strength of the volcanic soil and the richness of the hilly microclimate . The harvest, carried out in mid- October , allows for the harvest of ripe grapes rich in aromatic substances .
The vinification process is meticulous and distinctive : after cryomaceration , the must ferments on its skins for 120 days . This is followed by a long aging period of 3 years on the lees in concrete barrels , which gives the wine depth, structure , and a highly elegant , controlled oxidation profile .
On the nose , notes of ripe fruit , citrus peel , dried flowers , honey, sweet spices , and flint emerge . The palate is full, vibrant , and savory , with a perfect balance between freshness and complexity.
