ZYME

The Zymé winery was born in an ancient sandstone quarry dating back to 1400 AD, in San Pietro in Carlano, in the heart of the Valpolicella Classica, on the foundations of the winemaking culture of this area. Its far-sighted owner and winemaker, Celestino Gaspari, after spending his childhood in his parents' vineyards and after gaining experience in the art of wine from his future father-in-law Giuseppe Quintarelli, developed a philosophy, an ethic, a culture based on the cornerstones of sustainable production and excellence of the result.

Zymé is not a project, but a constant evolution, as symbolized by the choice of the name itself: the Greek word Zymé means precisely the ingredient of metamorphosis, yeast. Immersed in the rock, the cellar rises on three artistic levels, designed by the architect Moreno Zurlo in perfect balance with the idea of ​​eco-sustainability of his winemaker: while in the silent depths of the cellar a river flows that carries meteoritic waters into the earth, on top of the roofs the solar panels charge themselves with the sun's energy.

Territorial identity and pure love for nature are the principles from which ambitious choices have been made, such as the revaluation of the ancient native vines cultivated in nine hectares of vineyard. Looking down on the cellar, you can see the pentagonal shape of the vine leaf, emblem of the encounter between history and nature and symbol of Zymé… Each tip corresponds to one of the five main elements for the production of wine: man, the vine, the earth, the sun and water.
