Alpkäse is a high-quality raw-milk Alpine cheese produced on the Gamperdona Alp in Vorarlberg. Here, between the end of May and the end of August, the milk of 130 cows, fed exclusively on Alpine grass, is transformed into a cheese with an authentic character and unmistakable taste.
After an initial maturation period of one month in the alp, the forms are transferred to a maturation bunker, where they mature for at least 9 months. This process gives the Alpkäse a distinctive appearance and an intense and complex aroma.
Its creamy texture and golden yellow color come directly from the natural diet of the cows, without hay, which feed only on fresh mountain grass. The result is a cheese with a delicate flavor, enriched with sweet and creamy notes, which maintains intact all the aromatic nuances of raw, unpasteurized milk.
Alpkäse is much more than a cheese: it is the expression of the Alpine dairy tradition, born from the encounter between uncontaminated nature and artisan mastery.
