Rum Neisson Profil 107 BIO Eleve Sous Bois 70 cl

This rhum agricole élevé sous bois comes from sugar cane grown according to the principles of certified organic farming on the plots of the Neisson distillery, located in La Thieubert, Le Carbet, in the north-west of Martinique.

After the harvest, which is done either manually or mechanically, the canes are transported to the distillery and pressed within the day in mills powered by a steam engine, powered by bagasse, the fibrous residue of the cane used as fuel.

Distillation takes place in a copper Savalle column, while the 15-month aging takes place in reconditioned ex-bourbon barrels. Subsequently, the rum is refined in French oak barriques, previously used for the maturation of Neisson, enriching itself with depth and aromatic complexity.
