GenussJäger, which in Italian means "pleasure hunters", is a raw milk cheese with a creamy and finely melting paste, with a balanced aromatic profile that combines a delicate spicy note with milky and creamy nuances. Its distinctive feature is the so-called "bunker note", a light earthy hint that comes from the particular maturing environment.
This cheese is the result of almost two years of research and development, during which Johannes and Hubert have perfected a recipe designed to enhance the unique maturation conditions in the natural stone bunker. Here, thanks to an ideal microclimate, the GenussJäger develops an intense flavor and a soft, enveloping texture.
Its minimum maturation is 8 months, of which at least 7 months are spent in the bunker, an essential step to give it its aromatic complexity and refined texture. The name GenussJäger represents the commitment to the search for the best raw materials and the special people who work with passion to create an excellent product.
