Gabriele Rocchi's Cantuccini alle Mandorle d'Avola pay homage to the centuries-old tradition of this biscuit, born in the 16th century as a sweet bread for bakers, whose discarded parts were given to peasant families. It was Caterina de' Medici who enriched the recipe with almonds, giving life to a dessert that conquered Europe.
In 1691, the Accademia della Crusca defined them as “sliced biscuits, made of flour flowers, with sugar and egg white”, while in 1779, Amadio Baldanzi codified the first official recipe. Gabriele Rocchi's version enhances this tradition with the excellence of Avola Almonds, offering a fragrant and refined cantuccini, perfect for dipping in Vin Santo, according to the most authentic Tuscan custom.
