The Clandestin project was born with the aim of enhancing the west-facing vineyards, where the Pinot Noir matures slowly, developing tension, complexity, and aromatic depth. It is precisely this unconventional choice that gives Boréal its unique, vibrant, and contemporary character.
The grapes, sourced from organic vineyards over twenty years old, are grown on clay-limestone soils that give the wine minerality and precision. The winemaking process follows a natural, artisanal approach: spontaneous fermentations with indigenous yeasts, aging in 350- and 600-liter oak barrels, and no fining or dosage, preserving the purity and authenticity of the terroir.
The sensory profile is refined and incisive: the bright golden color with fine perlage anticipates aromas of crisp red fruits, ripe citrus, and elegant mineral notes, enriched with spicy and vegetal touches. On the palate, it is linear and energetic, with vibrant acidity and a long, savory, and persistent finish.
