Koflers Speck Alto Adige PGI is a quintessential South Tyrolean culinary tradition, crafted using artisanal methods passed down through generations. This speck is made from carefully selected pork legs, flavored with a balanced blend of mountain herbs and natural spices, and then lightly smoked over beech wood, using the traditional South Tyrolean "cold" technique.

The curing process takes place slowly, for at least six months, in well-ventilated rooms at high altitude, where the pure Dolomite air imparts the product with its distinctive aroma and unmistakable delicacy. The result is a speck with a firm yet tender texture, an intense and harmonious flavor, perfectly blending the sweetness of the meat with the smoky and spicy notes.

Koflers speck PGI is perfect served thinly sliced ​​on a mixed platter, accompanied by rustic bread and aged cheeses, or used in cooking to enrich first courses, savory pies, or typical Alpine recipes.
