Tuna fillets cured in olive oil from the Azores archipelago, an autonomous region of Portugal, located in the middle of the Atlantic.
To make Mestre Saúl preserves, the selected tuna fillet is handled “wisely”, according to the ancient techniques of curing fish in brine and is kept in the can for more than a year until it is ready to be consumed. The maturation process serves to add flavor without interfering with the main ingredient, tuna. This transforms over time, the fibers become softer and the flavor softer and more delicate. The cured tuna is tasted and appreciated in the best state of preservation, being a celebration of the best tuna in the Azores, living up to Maestro Saúl's motto: “Good things take a while to come”.
