Champagne Extra Brut SA (Sans Année) from Domaine Nowack is a blend of 60% Meunier and 40% Chardonnay, sourced from limestone-fossiliferous vineyards near Vandrières. Fermented with native yeasts in steel and fût de chêne, it rests over 24 months on the lees. This "entry-level" champagne has an energetic and territorial profile, with notes of apple, ginger and stone fruit, enriched by a persistent mineral finish. A wine that expresses the maturity and consistency of the grapes harvested at full ripeness.
