Santa Catarina tuna fillets are characterised by their delicate and slightly salty flavour, soft texture and pink colour.
In true Azorean style, Santa Catarina tuna is caught in Atlantic waters with hook and line, using a centuries-old traditional fishing art known as "jump and pole" fishing*. The tuna is then cooked in brine, following the tradition of the old cannery on the island of São Jorge. The result is a tuna with unrivaled flavour and texture.
