The Culatta Stagionata by Salumi Montali is a fine cured meat, obtained from the leanest and noblest rear part of the pork leg. This exclusive cut, handcrafted, represents one of the excellences of Parma's cured meats.
After careful trimming, the Culatta takes on its typical pear shape. It is then dry salted and left to rest to allow the salt to naturally penetrate the meat. Subsequently, the part not protected by the rind is covered with lard, a fundamental step to ensure slow and uniform curing.
The process is completed in the stone cellars of Montali, where, thanks to an ideal microclimate, the Culatta develops its intense aroma and the delicate and refined taste that distinguishes it.
